Reviving the Lost Flavours on Baisakhi


Baisakhi is one of the most beautiful festivals of India that celebrates the onset of spring season. Farmers celebrate this day by thanking Mother Earth for good harvest.

In Punjab, people celebrate the festival by wearing new and colourful clothes and visit Gurdwara; and pay respects to the Lord for good harvest all year round. Gifts are exchanged and ‘Guru ka langar’ is organised where everyone in the community would come together and share a meal. Kada prashad is distributed in all the gurdwaras and dishes such as sarson ka saag, makki ki roti, maa ki dal (kaali dal), meethe peele chawal are cooked,” elaborates Rachit Gupta, Operation Manager, Elora Lords Eco Inn, Lucknow.

Gupta further added that with time, some traditional recipes have been lost in transition. “History is witness to the tragedy of partition that not only affected the lives of people but also the authentic cuisine of a region. Lahori kukkadi chargha, Panner Multani Rahra Masala, Mottiyan Wali Makki, Adraki Gobhi Masala. Kunna Gosht & Ruh (Sugar Can Juice) Ki Kheer were popular in the pre-partition time…. but not anymore. This very thought of presenting something unique and something from a bygone era excited Rishi Kapoor, our in-house chef, who is all geared up to present a platter of nostalgia to the guests.

Elora Lords Eco Inn Lucknow is looking forward to entice the taste buds of the people with a lost cuisine and is all set to reintroduce some of these delicacies during this festive period at their Multi Cuisine Restaurant The Blue Coriander. With such revival in mind.
