Taj Lands End embarks on a special Sindhi Festival showcasing the rich tapestry of the Sindhi culinary heritage curated by MasterChef Deepa Chauhan available between Wednesday, 27th March 2024 – Sunday 7th April 2024 at Vista.

With a legacy rooted in the Indus Valley, Sindhi culture and cuisine has journeyed with the Sindhi community over a millennium adapting to newly travelled lands and alternate ingredients whilst ensuring cherished flavours endured resulting in a legendary culinary heritage transcending generations. The Sindhi Festival celebrates this lesser-known, incredible cuisine through a meticulously curated menu featuring authentic Sindhi dishes prepared according to traditional cooking methods whilst being presented with the talented Chef Deepa’s unique style.

Refreshing your mind with the Mogra Sharbat, a fragrant floral summer cooler calibrating your palate before you dive into an indugent culinary experience. The vegetarian menu boasts a vibrant spread beginning with Dal Tikki, a savoury potato cutlet filled with flavourful chana dal served with a green and tamarind date chutney balancing the burst of flavour. Dive into mains with the sumptuous signature Sindhi Kadhi, a tangy kadhi made in a tomatoes and chickpea flour base with okra and cluster beans, served with short-grain rice and assorted touk; a wedding special Shaadi Ki Bhaaji a decadent preparation of nadru, potatoes, spinach and brinjal. Complementing the mains are staples from a Sindhi Maani that is a whole wheat layered roti to Chawarn a rice preparation where short grain rice is tempered with ghee and shahi jeera. End your meal with TalleBadhi, a traditional sindhi sweet of chickpea flour fudge.

Non-vegetarians can begin their experience with appetisers including Kheema Tikki, a spiced minced meat cutlet encased in a crispy potato covering served with mint chutney and Papad Churi a crushed and spiced mix of Sindhi papad with Birista. Mains featured in the festival include preparations with distinct flavours like Cardamom Chicken which is known to be light on spices yet is a very soul-soothing preparation; Seyal Mutton, a tender mutton curry cooked in a rich, aromatic gravy made in its own juices leaving guests with the aromatic yet mildly spiced delicacy and Saae Bhaji featuring a medley of seasonal greens, vegetables and dals with spiced Amritsari wadi. Guests can enjoy it with Jowar Dhoda a sorghum millet roti and Bhugga Chawarn, a long grain rice preparation with caramelized onion and whole spice tempering.

A high-tea experience is legendary at a Sindhi household. Chef Deepa brings the mid-afternoon delightful experience part of the Sindhi Festival with a special High Tea menu with delightful additions of Koki Bites with flavoured labneh where flaky crispy onion and chilli koki is served with pickle spiced hung curd and papad; Mirchi Chaat where guests can enjoy non- spicy chillies fried in chickpea batter served with mint and tamarind date chutney and Dal Pakwan a perfect snack where bite sized pakwans are topped with a trio of dals and served an assortment of spicy, sour and sweet chutneys among many other dishes.
